At the heart of the gardens is Estevan Lodge, where chef Pierre-Olivier Ferry and his team prepare each product with care. These culinary delights are made from produce of the best quality, such as unpasteurized honey vinegar, organic wine vinegar and organic sugar cane. Much of the wild produce is picked fresh by Gaspésie Sauvage, a small family business based in Douglastown in the Gaspé Peninsula, whose specialty is harvesting native edible plants from the local forest, such as mushrooms and wild berries.
Reford Gardens line of culinary delights includes two spreads, three pickles and three jellies. For breakfast, try one of the spreads on your croissant or with cheese and pancakes. The pickles add a special flavor to your salads or sandwiches in addition to providing a colourful garnish to a plate of smoked fish. The jellies are an excellent companion to a roast of lamb, game or poultry as well as enhancing the flavor of many local cheeses.
